These cupcakes in particular were created for a “Taco Two’s-day” birthday party, which might have involved margarita’s for the adults.

The basic vanilla cake happens to be my FAVORITE vanilla cake recipe that I have made for over 10 years.
It’s been a staple for birthdays, showers, weddings, and my husband’s favorite treat.

If you’re looking for an tasty cupcake, then this easy churro cupcake with a hint of cinnamon is for perfect for you! Add vanilla cream cheese frosting for the perfect finish!
Preheat oven to 350°F. Place cupcake liners in 2 - 12 count muffin tins.
In a small mixing bowl combine the flour, baking soda, and salt. Set aside.
Measure out the buttermilk and heavy cream in a measuring cup with pour spout. Set aside.
In a large mixing bowl, cream together the butter and sugar., Add the eggs - one at a time. Mix well after each addition. Once eggs have been added, add vanilla and cinnamon.
FOLLOW THESE NEXT STEPS CAREFULLY: Alternating with the flour and milk mixtures, add to the butter mixture. BEGIN and END with the flour mixture. Mix after each addition of flour or milk. After all has been added, scrape down sides of the bowl, then mix batter until just combined (3-4 turns of the mixture).
Pour a 1/4 cup of batter into each cupcake liner.
Sprinkle 1/2 teaspoon of cinnamon/sugar mixture on top of each cupcake.
Bake at 350°F for 18-22 minutes or until cupcakes spring back when lightly touched!
Remove from oven and allow to cool in the pan for 5 minutes, then remove the cupcakes from the pan and transfer to a wire rack to cool.
Place butter and cream cheese in mixing bowl. Combine WELL.
Add vanilla and butter extracts along with the cinnamon. Mix well.
SLOWLY, add the powdered sugar. If frosting is too thick, use a tablespoon of milk to make spreadable!
Bake churros according to package.
Cut baked churros in half.
Top cupcake with frosting and half of churro!
