Easy Churro Cupcakes with a Hint of Cinnamon

Ingredients

Cake Batter

  • 3/4 cup unsalted butter softened
  • 1-3/4 cups sugar
  • 3 eggs
  • 3 cups unbleached flour (I used King Arthur)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 2 tsp cinnamon
  • 1-1/2 cups buttermilk
  • 1/4 cup heavy cream

Batter Topping

  • 1 tsp cinnamon
  • 1 tbsp sugar

Frosting

  • 2 sticks unsalted butter
  • 8 ounces cream cheese (one block)
  • 3 cups powdered sugar
  • 1 tsp cinnamon
  • 2 tsp vanilla extract
  • 1 tsp butter extract
  • 1 package frozen churros

Instructions

To make the churro cupcakes

  1. Preheat oven to 350°F. Place cupcake liners in 2 - 12 count muffin tins.


  2. In a small mixing bowl combine the flour, baking soda, and salt. Set aside.


  3. Measure out the buttermilk and heavy cream in a measuring cup with pour spout. Set aside.


  4. In a large mixing bowl, cream together the butter and sugar., Add the eggs - one at a time. Mix well after each addition. Once eggs have been added, add vanilla and cinnamon. 


  5. FOLLOW THESE NEXT STEPS CAREFULLY: Alternating with the flour and milk mixtures, add to the butter mixture. BEGIN and END with the flour mixture. Mix after each addition of flour or milk. After all has been added, scrape down sides of the bowl, then mix batter until just combined (3-4 turns of the mixture). 


  6. Pour a 1/4 cup of batter into each cupcake liner. 


  7.  Sprinkle 1/2 teaspoon of cinnamon/sugar mixture on top of each cupcake.


  8. Bake at 350°F for 18-22 minutes or until cupcakes spring back when lightly touched!


  9. Remove from oven and allow to cool in the pan for 5 minutes, then remove the cupcakes from the pan and transfer to a wire rack to cool.


To make the frosting:

  1. Place butter and cream cheese in mixing bowl. Combine WELL.


  2. Add vanilla and butter extracts along with the cinnamon. Mix well. 


  3. SLOWLY, add the powdered sugar. If frosting is too thick, use a tablespoon of milk to make spreadable!


To make the churros:

  1. Bake churros according to package.


  2. Cut baked churros in half.

  3. Top cupcake with frosting and half of churro!
